A one-time private residence right by twelfth-century bridge over the River Wye (with gardens sloping down to the water's edge), the Bridge at Wilton now functions as a personable country restaurant-with-rooms. It regularly picks up 'Flavours of Herefordshire' awards, and local produce is one of the hallmarks of the kitchen's work; there's also the bonus of a productive kitchen garden for home-grown fruit, vegetables and herbs.
Twice-baked soufflé of Hereford Hop cheese with rhubarb compote and sirloin of Herefordshire beef with braised shin, horseradish mash and trompette de mort mushroom purée are typical offerings from the monthly-changing menu; there's also plenty of Cornish fish in the shape of lobster ravioli with squash purée, caramelised pineapple, chilli and vanilla dressing or roast wild sea bass with fennel fondant and shellfish butter.
