Over the years Manju Choudhury and his brother have been at the helm of more than 20 restaurants dotted throughout south London and Surrey Manju recently embarked on a two-year sabbatical travelling and researching the regional cuisines of the Indian Sub-continent. Now he's back, and the result is Café Zia.
He has teamed up with Govinda Prasad-Gurung – formerly head chef at the Bombay Bicycle Club in Battersea – and between them they have created a highly original menu that traverses all 22 regions, from the Himalayas to the Indian Ocean and the Arabian Sea to the Bay of Bengal.
