Since opening in 1995, Cambio de Tercio has stuck to its own very distinctive style, a world away from most tapas bars in the capital. The decor makes a big impact, with its bullish orange-red, black and yellow tones, circular tables and dramatic skylit area (complete with chandeliers) at the back of the restaurant.
The kitchen goes about its business with a keen eye on modern trends - think stunning presentation, short cooking times and delicate flavours.
