A focal point of historic Brecon, this former Georgian coaching inn was built on the site of a much older Norman castle - and you can still the ruins next to the hotel. Much of the original interior has been preserved, although the place itself has expanded, with a bar and bistro, plus five private dining rooms in addition to the main restaurant.
The kitchen makes excellent use of regional produce, procuring meat from farms in mid-Wales and fish from the Pembrokeshire coast for seasonal menus that take in the likes of venison terrine with apple and whiskey salad or duck breast with mango and mint sauce.
