Castleton House Hotel Review

Tamworth pigs gorge themselves on orchard apples in the grounds of this Victorian country mansion not far from historic Glamis Castle. They are part of a virtually self-sufficient set-up that also includes free-range chickens and a working kitchen garden; added to this they may good use of other good stuff, from Eassie asparagus to Orkney scallops.

All of these items find their way into the kitchen, where chef Matt Dobson produces a range of ambitious Anglo-French dishes.
