The husband and wife team of Ben and Pamela McKellar have made a name for themselves with their Gingerman restaurants in Brighton before adding a third string to their bow in the shape of the Ginger Pig gastropub. Set in a defunct Hove hotel just a few minutes' walk from the beach, it's described as a 'relaxed foodie hangout'.
Over the years, the McKellars have built up a valuable network of local producers and suppliers, who also provide excellent stuff for the new pub kitchen: pork from Boyton Farm, for example, might appear as slow-roast belly with creamed leeks and apple sauce or in sausages with parsnip mash and onion gravy.
