The brainchild of flamboyant hospitality entrepreneur Roy Ackerman, Homage is an ambitious addition to the gold-star Waldorf Hilton (which celebrated its centenary in 2008). It comprises three venues in one vast, all-day space and tips its hat to the grand cafés that were once a seminal feature of Europe's great cities.
