Having made a name for himself at The Moody Goose in Bath, Stephen Shore decided to up sticks and head out to the prosperous backwaters of rural Somerset. These days he is ensconced in a converted twelfth-century priory complete with a walled garden. Like everything in the Moody Goose, the dining room manages to balance style and pedigree with simple touches in the shape of flagstone floors, crisp linen and original French watercolours on pale walls.

Stephen cooks in a pint-sized kitchen with one other chef, and creates dishes that take their cue from the seasons.
