Juliette Nelson and Stephen Wall got hooked on 'pho' during a trip to Vietnam, so they decided to drop out of their careers in marketing and set up a neighbourhood café-cum-takeaway in London devoted to this archetypal national dish.
Pho (pronounced 'fur') is an almost embarrassingly healthy brew, consisting of flat rice noodles in long-cooked hearty stock, jazzed up with spices, then embellished with all manner of toppings and great bunches of fresh green coriander and other herbs.
