Despite its grandiose exterior, the four-storey Regency Hotel has moved with the times: WiFi computers in every bedroom are typical of its user-friendly, high-tech approach.
The kitchen is also in on the ball, and the menu offered in the wood-panelled restaurant reads well: pan-roasted 'tanroagans' (Manx queenie scallops) with snow peas and oyster mushrooms, ham hock and parsley terrine with piccalilli, and salmon fillet spiced with chilli and cumin, served with couscous and baby pak choi are typical.
