Perelle Bay – famed for its spectacular sunsets and seascapes – forms a suitably dramatic backdrop to this purpose-built but traditionally appointed hotel. There are glorious views from the large windows of the restaurant, with its classy formal design and food that makes the most of abundant local fish.
A special seafood menu caters for those who relish the fruits of the sea: clam chowder, Guernsey lobster with mayonnaise or garlic butter, whole Chancre crab and paupiette of sole filled with scallop and orange mousse served with fennel purée are typical offerings.
The carte also has its share of seafood, but casts its net further afield for pressed duck terrine with red onion marmalade, grilled rack of lamb with a brioche crust and rosemary jus, and honey-braised belly pork topped with a chilli crab wonton.
