Sabor is all about Latin American taste or – to be more precise – the tangy, healthy style of cooking known as 'Nuevo Latino'. Owner Esnayder Cuartas gleaned a great deal from his time travelling around South America, and it shows in the creative thrust of the menu. Ingredients such as Nicaraguan red beans and Argentinian parsley are garnered from all over, although the food has a bias towards Colombia.
The kitchen comes up trumps with a racy, razor-sharp menu that blends traditional favourites with exuberant, off-the-wall ideas.
