The Soufflé restaurant is set in Bearsted, a gentrified fringe of Maidstone, a neat, trim suburb that feels like a separate village complete with its own green. At its heart is this sixteenth-century, Grade II-listed cottage with a terrace and an interior of skeletal timber frames, exposed brickwork and even an old bread oven.
Nick Evenden's ambitious menu includes starters like pan-fried Rye Bay scallops with a pea velouté and white truffle oil followed perhaps by roast rump of lamb with Moroccan spices and braised shoulder, herb-crusted suprême of salmon with a red wine reduction, tomatoes and basil or - for vegetarians - gâteau of aubergine caviar with rösti potatoes.
