Fine dining takes place in Fields Restaurant, an intimate beamed dining room overlooking the grounds. The kitchen works to a seasonal repertoire with modern European overtones: begin with crab tortellini and watercress cream with preserved lemon, then move on to breast of pheasant with butternut squash risotto or halibut with tomato gratin, crispy pancetta and pine nut relish.
