Perched high above the 'sandstone Sphinx' that is The Museum of Scotland – with stunning views of the floodlit castle and St Giles Cathedral – this top-floor dining room plies its trade, serving up modern Scottish dishes to A-list celebs (Joanna Lumley, Catherine Zeta Jones, Sean Connery) as well as tourists and locals.
The kitchen taps into Scotland's abundant supplies of seafood offering lobsters, Argyll rock oysters (served with pickled vegetables, Tabasco and shallot vinegar), Fife crab and dishes such as seared scallops with split pea purée, romesco salsa and pancetta or whole lemon sole with sage and caper butter, green beans and mussel beignets.
