London's famous 'sustainable sushi restaurant', Tsuru (named after Japan's iconic crane) is a cool, clean-cut newcomer on the pedestrian link between Southwark Street and Sumner Street in Bankside. Inside, it has been stylishly done out, with lots of red lanterns and black paintwork creating just the right mood.
Sushi is made-to-order throughout the day, and the kitchen uses organic cod as well as sea bass and crab from Cornwall, organic Scottish salmon and line-caught tuna.
